Paul Watkin

Bio

Paul Watkin, decided long ago to share his passion for wine, the most enchanting of liquids. As Oscar Wilde mused about the best means of dealing with temptation (he urged one to yield to it), so Paul believes wine may also be approached…  By surrendering to it.

Wine educator and industry professional has served as a fine dining room professional at renowned restaurants and hotels (such as O’Doul’s on Robson Street).  He has acted as Beverage Program Manager and Wine List Consultant, as an Assistant Manager (for West Vancouver’s Dundarave Wine Cellar), and Dining Room Manager and Service Instructor at the prestigious Pacific Institute of Culinary Arts.  He is an active member of the Society of Wine Educators, Cellar Master for the South World Wine Society and has written on the subject of wine all the while maintaining an active role as a wine consultant and educator for the hospitality/wine industry and the public at large.

Spain is a country rich with history and world renowned for its wonderful palette of food, culture, language and art.  It is believed that wine grapes have been cultivated in Spain as early as 4000b.c. and it has been influenced by many cultures including the Phoenicians, Carthaginians, Moors, Visigoths and Romans.  Today, Spanish wines boast great flavour, value and diversity.  Hemmingway knew it and now you are going to taste it.
